Walmart is closed today. Me, I've taken two calls since starting my shift. On Christmas Day. But I'm at home so it's okay.

Last night we got perhaps ten minutes into the George C. Scott version of Christmas Carol when I realized we didn't have any cookies.
We had determined that whatever Christmas cookies we made would include a batch of peanut butter cookies, but I couldn't find any pre-made dough while shopping, and it kind of fell by the wayside. But I had the ingredients, so I set out to make them using a recipe I found on-line.
The cookies in the first three dozen each got a Hershey's kiss atop it. Thereafter I made regular cookies, and ended up with another couple dozen of those. I think, in fact, it ended up being a total of six dozen cookies.
Why is it that when I make cookies on Christmas Eve there always ends up being a ton of them? That happened with the chocolate chip cookies I made one year; I accidentally made a double batch--but this was just the straight recipe. A cup of peanut butter, a cup of butter, one cup each of white and brown sugars; two eggs, and 2.5 cups of flour. 1.5 tsp each of baking powder and baking soda, and half a teaspoon of salt. Pretty simple, all told, and bake in 375° oven for 10 minutes.
Mrs. Fungus watched Jingle All The Way while I baked. I never really cared for that movie myself, but she enjoys it.
They're a little less sweet than I like them, but that's really a matter of degree. I think if I'd sprinkled the normal ones with a little sugar (or rolled them in it as I sometimes do) they'd be perfect.
Anyway, we had a nice Christmas Eve, and it's looking like we'll have a pretty nice Christmas Day.
