#6965: Well, we sure got pecan tarts now

For the crust, you mix 4oz of cream cheese, 1.5 sticks of butter, and 1 1/3 cups of flour together. Divide into 32 equal portions and press into mini muffin tins. (You know, this.) The crust dough should cover the entire interior of the cup.

Then, the filling:

1 cup ground (finely-chopped) nuts
1 cup brown sugar
1 tsp Vanilla
1.5 eggs
1 tbsp butter

Mix all that together, then fill the crusts about 3/4 full or so.

Bake at 350 for 15 minutes, then reduce heat to 250 and bake another 15 minutes. Allow to cool and turn out of pan.

Try not to eat the entire pan at one sitting.

Also made a batch of oatmeal cookies. You know, with a stand mixer, oatmeal cookies are incredibly easy to make.

Tomorrow, chocolate chip cookies, plus we'll finally bake the sugar cookies, and I'll make one more batch of pecan crescents. Then the baking will be done, and just in friggin' time, too, because I've got wrapping to do, and I still need to find a turkey breast section and get the brine made for it, and....
